and hawthorn flavours; very pleasant as an aperitif wine, its
finest qualities surfacing when served with freshwater fish

Our sparkling wines are produced from
the Jacquère and Chardonnay grape variety and follow the elaborate
process of the bottle-fermented traditional method. These pale
yellow sparklers have a remarkable fine nose. Their white grape
and vanilla-like aromas marry as well with aperitif dishes as
with starters and lean fish. Better to choose a fairly sweet
(demi-sec) than a dry (brut) style of sparkler to go with desserts
or all other kind of sweet dishes, as sweetness actually intensifies
the palate's sensibility to acidity.
